Penne with Grape Tomatoes

Tonight I made Penne with Grape Tomatoes for supper and it was so yummy! So I decided I wanted to share the recipe so you could try it too!

Penne with Grape Tomatoes

1lb. Penne Pasta
2 Tbsp. Olive Oil
1 Tbsp. Minced Garlic ( We like garlic so I usually use more!)
2 Pints Grape Tomatoes, halved
1/2 tsp. salt
1/4 tsp pepper
1/4 C. Fresh Basil, thinly sliced (I didn't have Basil so I put fresh Spinach leaves in it instead.)

Instructions:

1. Cook Pasta according to package instructions.
2. Meanwhile, heat olive oil in large skillet and add garlic and tomatoes. Let cook for a few minutes and then add 1/3 c. water, bring to a boil, then simmer.



3. Drain Pasta
4. Mix Pasta, Tomato Mixture, and Basil/Spinach

For a Vegan option, I would stop here, but for those of you who might like some cheese I added a little Feta Cheese for a garnish because I had some that needed to be used.  It looked so beautiful and tasted AMAZING!! My family gobbled it up too! I hope you guys enjoy this easy and delicious recipe!

The Road to a Healthier Me

Here we are, Day 1 of the new me! So the question remains, "What's for dinner?" Well thanks to one of my new loves, Pinterest, this is what's for dinner! Vegan Broccoli Cheese Pasta Bake! Now to go grocery shopping!
