Penne with Grape Tomatoes

Tonight I made Penne with Grape Tomatoes for supper and it was so yummy! So I decided I wanted to share the recipe so you could try it too!

Penne with Grape Tomatoes

1lb. Penne Pasta
2 Tbsp. Olive Oil
1 Tbsp. Minced Garlic ( We like garlic so I usually use more!)
2 Pints Grape Tomatoes, halved
1/2 tsp. salt
1/4 tsp pepper
1/4 C. Fresh Basil, thinly sliced (I didn't have Basil so I put fresh Spinach leaves in it instead.)

Instructions:

1. Cook Pasta according to package instructions.
2. Meanwhile, heat olive oil in large skillet and add garlic and tomatoes. Let cook for a few minutes and then add 1/3 c. water, bring to a boil, then simmer.



3. Drain Pasta
4. Mix Pasta, Tomato Mixture, and Basil/Spinach

For a Vegan option, I would stop here, but for those of you who might like some cheese I added a little Feta Cheese for a garnish because I had some that needed to be used.  It looked so beautiful and tasted AMAZING!! My family gobbled it up too! I hope you guys enjoy this easy and delicious recipe!
